Oh my goodness! Go as fast as you can to the store and get the ingredients to make this dish! It had sounded good to me for a while and I finally made it.  It is SO good!  My husband gave it rave reviews and it was EASY! Isn’t that the best, when it is delish, yet simple?  You could omit the olives if you aren’t an olive fan. Honestly, I normally am not a big “olive” person, but loved them in this dish! This will be made time and time again in our house. It would also be an excellent dish to take to someone because it is a little different from the usual casserole. Okay, ready set go!  ALAMO HEIGHTS CHICKEN p. 318

4 chicken breasts, cooked and diced

1/2 cup sliced ripe olives

1 medium onion, diced

1 lb Monterey Jack cheese, shredded

crushed Fritos to cover

SAUCE

1 can cream of chicken soup

4-5 TBS picante sauce

1/2 cup sour cream

To prepare sauce, mix together soup, picante sauce, and sour cream. Double layer in casserole: chicken, sauce, olives, onion, and cheese. Bake at 350 degrees for 15-20 minutes. Sprinkle with Fritos after cooking.
